Easy Chocolate Oatmeal Bars

What do you need:

  • 3 cups quick-cooking oatmeal

  • 1 cup semisweet chocolate chips

  • 1 cup of butter

  • 1/2 cup peanut butter

  • 1/2 cup packed brown sugar

  • 1 teaspoon vanilla extract

In a saucepan over medium heat, melt the butter, then add the brown sugar and vanilla. Add the quick cooking oats, reduce heat to low and cook for 2-3 minutes. Remove from heat and press half of the cooked oatmeal into a greased 9×9-inch skillet. Reserve the remaining oatmeal to cover.

In the same saucepan, add the chocolate chips and peanut butter and melt over low heat, stirring frequently. Stir until the mixture is smooth, then pour over the pressed oats in the skillet. Using the back of the spoon, spread the mixture evenly.

Cover the chocolate layer with the reserved oatmeal, pressing gently. Cover and refrigerate overnight. When done, place at room temperature for a few minutes before cutting into bars.
